Anguilla

To be fair, Anguilla is not on the United Nations list of member states. It's a British Overseas Territory. That hasn't stopped me from reading the Blanchard books or checking out Bankie Banx music videos on YouTube.

Both A Trip to the Beach and Live What You Love by Bob and Melinda Blanchard are fun, easy books to read about giving up a more traditional life to start a restaurant in Anguilla. A Trip to the Beach is available in Kindle. Both are available in hard cover and paperback and, as of today, both are available used on Amazon for less than a dollar.

I found one of the Blanchard recipes online, Anguillan cornbread, and made it for Christmas 2019 with my in-laws. It was good and fit in perfectly with the jerk chicken made by my Jamaican sister in law. http://acookscollection.weebly.com/anguilla-cornbread.html

Morgan Freeman & Friends: Caribbean Cooking for a Cause also has one of their recipes, Blanchard's Cracked Coconut. In addition, the Blanchards have their own cookbook, also available on Amazon.

The Blanchards would be the first to tell you that there are many great restaurants on Anguilla. Great Chefs of the Caribbean is a series showing how to cook gourmet food from all over the Caribbean. I watched episode 8 (available on Amazon, YouTube, or purchase of DVDs) to catch the Anguillan version of artichoke with smoked salmon and goat cheese. That episode also showed how to BBQ Swordfish (Grand Cayman) and prepare quava mousse in fruit soup (St. Thomas).

Since I'm a big fan of the pictures at thecrazytourist.com, I went looking for an Anguilla picture from them to attach to this blog. They included Anguilla in side trips from St. Maartin and best beaches of the Caribbean. (Photo credit to Shutterstock for the Shoal Bay picture found through thecrazytourist.com.)

When this pandemic is over, your local travel advisor could put together an amazing trip to Anguilla. Shout out to my favorite travel advisor, Kaitlin Darnell at Laura's Travel in Redlands. May the travel industry survive and thrive - may we all survive, thrive, recognize our mutual humanity, learn to deal with our conflicts, and allow peace and health to flourish in Anguilla and throughout the world.
